Instructions
- Prepare the peanut sauce by whisking together peanut butter, sriracha, brown sugar, soy sauce, lime juice, minced garlic, and grated ginger in a bowl.
- Add coconut milk to the peanut sauce and whisk until smooth.
- Cut the chicken breast into small pieces.
- Heat cooking oil in a skillet and cook the chicken until browned on all sides.
- Add the peanut sauce to the skillet and let the chicken simmer in the sauce over low heat.
- Cook the noodles according to package directions and drain.
- Combine the cooked noodles with the chicken and peanut sauce in the skillet and mix well.
- Top with chopped peanuts and cilantro before serving.
