Ingredients

The noodles and chicken

  • 1 pound DeLallo linguine noodles
  • 3 pieces cooked chicken breasts, sliced or chopped (about 4 cups)

The vegetables

  • 5 pieces carrots, peeled and thinly shaved into ribbons
  • 3 pieces seedless cucumbers, thinly shaved into ribbons
  • 2 pieces bell peppers (red, yellow, or orange), seeded and thinly sliced
  • 6 pieces green onions, chopped thinly
  • ½ bunch cilantro leaves, chopped

The peanut dressing

  • 4 cloves garlic, minced or pressed
  • 1 inch knob of ginger, peeled and grated
  • ½ cup creamy peanut butter
  • ⅓ to ½ cup water
  • 3 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon hot chile sauce (like Sambal Olek)

Instructions

  1. Cook the linguine noodles according to package directions, then rinse and set aside.
  2. In a large bowl, combine the cooled noodles and chopped vegetables.
  3. Blend the dressing ingredients in a blender until smooth, adding water as needed to thin it out.
  4. Pour the dressing over the noodles and vegetables, then toss to coat.
  5. Garnish with additional cilantro and green onions as desired.
