Ingredients

The vegetables

  • 2 Tablespoons sesame oil
  • 2 teaspoons minced or chopped garlic
  • 1 cup shredded carrots
  • 1 cup thinly sliced cabbage
  • 1 large bell pepper
  • 1.5 lbs zucchini
  • 2 large chicken breasts

The peanut sauce

  • ½ cup creamy peanut butter
  • cup honey
  • cup soy sauce
  • 2 Tablespoons sesame oil
  • 2 Tablespoons rice vinegar
  • 2 teaspoons fresh ginger
  • 1-2 teaspoons Sriracha

Optional toppings

  • 1 Tablespoon sesame seeds
  • 1 handful chopped cilantro
  • ½ cup peanuts
  • 1 Tablespoon chopped green onion

Instructions

  1. Heat sesame oil and garlic in a skillet over medium heat, then add carrots, cabbage, and pepper, cooking until tender.
  2. Add zucchini noodles and shredded chicken to the skillet, cooking until the zucchini is softer.
  3. In a separate saucepan, combine peanut sauce ingredients over low heat, whisking until smooth.
  4. Pour the peanut sauce over the chicken and vegetables, tossing to combine.
  5. Serve topped with optional garnishes.
