Ingredients

The noodles

  • 1 lb. zucchini
  • 4 oz. carrots
  • 2 oz. spaghetti (optional)

The sauce

  • 4 tablespoons creamy peanut butter
  • 4 tablespoons Thai sweet chili sauce
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon peanuts, chopped

Instructions

  1. Trim the ends of the zucchini and spiralize them to create noodles.
  2. Spiralize the carrots to create carrot noodles and discard any excess water.
  3. If using spaghetti, cook it according to package instructions and set aside.
  4. Mix all the noodles together in a bowl.
  5. Prepare the Thai peanut sauce by mixing peanut butter, sweet chili sauce, and vinegar until smooth.
  6. Gently toss the veggie noodles with the peanut sauce, being careful not to overmix.
  7. Top with crushed peanuts and serve immediately.
