Ingredients

The Salad

  • 2 large zucchini
  • 1 large carrot
  • ½ cup red cabbage
  • ½ cup snow peas or sugar snap peas
  • 2 stalks green onions
  • ¼ cup cilantro leaves

The Sauce

  • ½ cup creamy almond butter
  • 2 Tbsp avocado oil
  • 1 Tbsp toasted sesame oil
  • 1 clove garlic
  • 1 tsp grated fresh ginger
  • 1 pinch red pepper flakes or cayenne
  • 3 Tbsp coconut aminos
  • 1 Tbsp water
  • 1 juice lime
  • as needed lime wedges for serving

Instructions

  1. Spiralize the zucchini and carrot into noodles and place them in a large bowl.
  2. Add red cabbage, snow peas, green onions, and cilantro to the bowl and toss lightly.
  3. In a small bowl, whisk together all sauce ingredients until smooth.
  4. Pour the sauce over the vegetables and toss to combine.
  5. Serve immediately with lime wedges, or store leftovers in the fridge for up to 2 days.
