Nutty Szechuan Vegetable Noodles

Ingredients

The sauce

  • 1 cup broth
  • 1 tbsp San-J gluten-free Szechuan sauce
  • 2 tbsp brown rice vinegar
  • 2 tbsp almond butter or Sunbutter
  • 2 tbsp honey
  • ¼ tsp ground ginger
  • 1 tbsp GF tamari sauce

The vegetables

  • 4 cups red cabbage
  • 1 medium red pepper
  • 4 medium zucchini

Optional toppings

  • to taste lightly toasted sesame seeds

Instructions

  1. Prepare the sauce by combining broth, Szechuan sauce, brown rice vinegar, almond butter, honey, ground ginger, and tamari sauce in a small pot.
  2. Bring the sauce mixture to a simmer and then reduce the heat to low.
  3. Chop and wash the red cabbage and sauté it over low to medium heat for about 15 minutes.
  4. Add the chopped red pepper to the cabbage and sauté for an additional 10 minutes.
  5. Lightly steam the julienned zucchini.
  6. Combine the sautéed cabbage, red pepper, and steamed zucchini in a bowl.
  7. Top the vegetable mixture with the prepared sauce.
  8. Optionally, sprinkle with toasted sesame seeds before serving.
