Ingredients

The sauce

  • 2 cloves garlic
  • 2 inches fresh ginger
  • 1 Tbsp vegetable oil
  • 1 14oz. can coconut milk
  • ½ cup natural peanut butter
  • 1 Tbsp soy sauce
  • 1 Tbsp brown sugar
  • ½ tsp sriracha hot sauce (optional)
  • 1 lime lime
  • ¼ bunch cilantro (optional)

The chicken and rice

  • 1 lb. boneless, skinless chicken breast
  • 4 cups cooked jasmine rice

Instructions

  1. Start by cooking the jasmine rice if it's not already prepared.
  2. Mince the garlic and grate the ginger, then sauté them in vegetable oil until fragrant.
  3. Cut the chicken into small pieces and add to the skillet, cooking until browned and cooked through.
  4. Lower the heat and add coconut milk and peanut butter, stirring until smooth.
  5. Mix in soy sauce, brown sugar, sriracha, and juice from half the lime, then heat through.
  6. Chop cilantro and serve the chicken and sauce over jasmine rice, garnished with cilantro.
