The chicken and rice

boneless, skinless chicken breast

cooked jasmine rice
Instructions
- Start by cooking the jasmine rice if it's not already prepared.
- Mince the garlic and grate the ginger, then sauté them in vegetable oil until fragrant.
- Cut the chicken into small pieces and add to the skillet, cooking until browned and cooked through.
- Lower the heat and add coconut milk and peanut butter, stirring until smooth.
- Mix in soy sauce, brown sugar, sriracha, and juice from half the lime, then heat through.
- Chop cilantro and serve the chicken and sauce over jasmine rice, garnished with cilantro.
