Instructions
- Cook the brown rice noodles until al dente, then drain and rinse under cold water.
- In a bowl, whisk together the peanut butter, coconut aminos, rice vinegar, toasted sesame oil, honey, lime juice, minced garlic, grated ginger, and red pepper flakes if using.
- Gradually add warm water to the sauce, whisking until smooth and creamy.
- Combine the cooked noodles with the peanut sauce in a large mixing bowl and toss until well coated.
- Garnish with chopped green onions, sesame seeds, chopped peanuts, and cilantro if desired.
- Serve immediately at room temperature or refrigerate to serve chilled.
