Ingredients

The noodles

  • 8 oz brown rice noodles

The sauce

  • ½ cup creamy unsalted peanut butter
  • 3 tbsp coconut aminos
  • 2 tbsp rice vinegar
  • 2 tbsp toasted sesame oil
  • 1 tbsp honey (or maple syrup for a vegan option)
  • 1 tbsp freshly squeezed lime juice
  • 2 cloves garlic (minced)
  • 1 tsp grated ginger
  • ¼ tsp red pepper flakes (optional)
  • ¼ cup warm water (more as needed)

Garnishes

  • to taste chopped green onions
  • to taste sesame seeds
  • to taste chopped peanuts
  • to taste cilantro

Instructions

  1. Cook the brown rice noodles until al dente, then drain and rinse under cold water.
  2. In a bowl, whisk together the peanut butter, coconut aminos, rice vinegar, toasted sesame oil, honey, lime juice, minced garlic, grated ginger, and red pepper flakes if using.
  3. Gradually add warm water to the sauce, whisking until smooth and creamy.
  4. Combine the cooked noodles with the peanut sauce in a large mixing bowl and toss until well coated.
  5. Garnish with chopped green onions, sesame seeds, chopped peanuts, and cilantro if desired.
  6. Serve immediately at room temperature or refrigerate to serve chilled.
