Easy Peanut Noodles

Ingredients

The noodles

  • 12 oz dried wheat noodles (such as thin udon)
  • Kosher salt

The peanut sauce

  • ½ cup chunky or creamy peanut butter
  • 2 Tbsp unseasoned rice vinegar or lime juice
  • 4 tsp pure maple syrup or honey
  • 1 tsp soy sauce or tamari
  • 1 small garlic clove, finely grated
  • Freshly ground black pepper

The toppings

  • 4 small Persian cucumbers, thinly sliced
  • 2 scallions, finely chopped
  • cup salted roasted peanuts, coarsely chopped
  • Raw sesame oil or chili oil for serving

Instructions

  1. Cook the noodles in boiling salted water until tender, then drain and rinse under cold water.
  2. Whisk together peanut butter, vinegar or lime juice, maple syrup or honey, soy sauce, garlic, and hot water until smooth, adjusting consistency as needed.
  3. Toss the drained noodles with the peanut sauce, then add sliced cucumbers and chopped scallions, seasoning with salt and pepper.
  4. Serve the noodles in bowls, topped with chopped peanuts and drizzled with sesame or chili oil.
