Easy Peanut Noodles

The peanut sauce

salted roasted peanuts, coarsely chopped

Instructions
- Cook the noodles in boiling salted water until tender, then drain and rinse under cold water.
- Whisk together peanut butter, vinegar or lime juice, maple syrup or honey, soy sauce, garlic, and hot water until smooth, adjusting consistency as needed.
- Toss the drained noodles with the peanut sauce, then add sliced cucumbers and chopped scallions, seasoning with salt and pepper.
- Serve the noodles in bowls, topped with chopped peanuts and drizzled with sesame or chili oil.
