Ingredients

The noodles

  • 3.3 ounces udon noodles or rice noodles
  • 1 cup frozen shelled edamame, steamed
  • 2 cups chopped spinach

The peanut sauce

  • ΒΌ cup peanut butter
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 4 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 4 tablespoons water

Optional garnishes

  • to taste chopped fresh herbs (basil, cilantro, mint)
  • to taste roasted peanuts (shelled)
  • to taste lime wedges
  • to taste ground Thai chili pepper or crushed red pepper

Instructions

  1. 1. Boil water in a pot and cook the noodles according to package instructions for about 5 minutes.
  2. 2. While the noodles are cooking, steam the frozen edamame and prepare the peanut sauce.
  3. 3. In a large bowl, whisk together peanut butter, rice vinegar, soy sauce, garlic, ginger, and water. Adjust the consistency with more water if needed.
  4. 4. Once the noodles and edamame are cooked, add them to the bowl with the peanut sauce along with the spinach.
  5. 5. Mix everything together and serve, garnished with fresh herbs, peanuts, lime wedges, and chili pepper if desired.
