Easy Peanut Noodles

The peanut sauce

Instructions
- 1. Boil water in a pot and cook the noodles according to package instructions for about 5 minutes.
- 2. While the noodles are cooking, steam the frozen edamame and prepare the peanut sauce.
- 3. In a large bowl, whisk together peanut butter, rice vinegar, soy sauce, garlic, ginger, and water. Adjust the consistency with more water if needed.
- 4. Once the noodles and edamame are cooked, add them to the bowl with the peanut sauce along with the spinach.
- 5. Mix everything together and serve, garnished with fresh herbs, peanuts, lime wedges, and chili pepper if desired.
