Instructions
- Cook the udon noodles according to package directions, adding the snow peas one minute before the cooking time ends.
- Drain the noodles and snow peas and set aside.
- In a bowl, whisk together the peanut butter, rice vinegar, soy sauce, sesame oil, brown sugar, ginger, garlic, and red pepper flakes or sriracha.
- Gradually whisk in water until the sauce reaches a smooth consistency.
- Combine the noodles and snow peas back in the pot, then stir in the peanut sauce.
- Serve topped with roasted peanuts and additional sriracha if desired.
