Ingredients

The noodles

  • 8 oz dried udon noodles
  • 4 oz snow peas, strings removed

The sauce

  • ½ cup natural peanut butter
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp toasted sesame oil
  • 2 tsp brown sugar (optional)
  • 1 tsp grated fresh ginger
  • 1 clove garlic, minced
  • pinch red pepper flakes or sriracha (to taste, optional)
  • 2–4 tbsp water

Toppings

  • ¼ cup chopped roasted peanuts

Instructions

  1. Cook the udon noodles according to package directions, adding the snow peas one minute before the cooking time ends.
  2. Drain the noodles and snow peas and set aside.
  3. In a bowl, whisk together the peanut butter, rice vinegar, soy sauce, sesame oil, brown sugar, ginger, garlic, and red pepper flakes or sriracha.
  4. Gradually whisk in water until the sauce reaches a smooth consistency.
  5. Combine the noodles and snow peas back in the pot, then stir in the peanut sauce.
  6. Serve topped with roasted peanuts and additional sriracha if desired.
