Peanut Spinach Udon

The noodles and greens

The sauce

peanut butter

sesame oil

agave nectar (or honey, if not vegan)

Instructions
- Cook the udon noodles according to package directions.
- Chop the baby spinach and prepare the sauce by whisking together all sauce ingredients, adjusting to taste.
- Once the noodles are cooked, drain and rinse them to cool.
- In the pot, combine chopped spinach and most of the green onions, then add the hot noodles on top.
- Let it sit for about 3 minutes, then pour the sauce over the noodles and toss to combine.
- Garnish with the remaining green onions and black sesame seeds before serving.
