Ingredients

The sauce

  • 1 recipe Peanut Sauce
  • 1 tablespoon tamari

The noodles

  • 8 ounces dried udon or rice noodles

The toppings

  • ½ English cucumber julienned
  • 1 medium carrot, julienned
  • 7 ounces extra-firm tofu, cut into thin strips
  • to taste fresh mint, cilantro, basil, and/or Thai basil leaves
  • to taste crushed peanuts or sesame seeds
  • to taste sriracha

Instructions

  1. Cook the noodles according to package instructions, then drain and rinse under cold water.
  2. Make the peanut sauce by whisking the sauce ingredients in a medium bowl until smooth.
  3. Toss the cooked noodles with the peanut sauce and the extra tablespoon of tamari.
  4. Portion the noodles into bowls and top with cucumber, carrot, and tofu.
  5. Garnish with fresh herbs and peanuts, and serve with sriracha on the side.
