Instructions
- Cook the noodles according to package instructions, then drain and rinse under cold water.
- Make the peanut sauce by whisking the sauce ingredients in a medium bowl until smooth.
- Toss the cooked noodles with the peanut sauce and the extra tablespoon of tamari.
- Portion the noodles into bowls and top with cucumber, carrot, and tofu.
- Garnish with fresh herbs and peanuts, and serve with sriracha on the side.
