Peanut Veggie Noodle Bowl

cilantro, chopped

The dressing

salted peanut butter

reduced sodium soy sauce

toasted sesame oil

pure maple syrup

seasoned rice vinegar (or apple cider vinegar)

fresh ginger, minced (or 1 tsp dried)
Instructions
- Cook the noodles according to package directions, then rinse with cold water and set aside.
- In a small bowl, whisk together the peanut butter, soy sauce, sesame oil, maple syrup, vinegar, garlic, and ginger until well combined.
- In a large bowl, combine the noodles, dressing, cilantro, bell pepper, carrot, cucumber, green onions, and peanuts. Stir until everything is well incorporated.
- Serve the dish cold.
