Peanut Soba Noodle Bowl

Ingredients

The noodle bowl

  • 12 ounces soba noodles or spaghetti noodles
  • 2 medium red bell peppers, cut into two inch strips
  • 1½ to 2 pounds broccoli stems, cut into florets
  • 1–2 tablespoons vegetable oil, for stir-frying
  • 2 handfuls fresh cilantro leaves, chopped
  • 1 small bunch green onions, thinly sliced
  • 1 handful roasted peanuts, for topping

The sauce

  • cup creamy peanut butter
  • ¼ cup rice vinegar
  • 2 cloves garlic, minced and crushed into a paste
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons reduced-sodium tamari
  • 1 big pinch crushed red pepper flakes
  • ¼ to ½ cup hot water

Instructions

  1. 1. Boil a large pot of water and cook the soba noodles according to package instructions. Drain and rinse with cold water.
  2. 2. Sauté the broccoli and red peppers in vegetable oil over medium-high heat for about 5 minutes.
  3. 3. Whisk together the sauce ingredients, adding hot water until you achieve a thin yogurt-like consistency.
  4. 4. Combine the cooked noodles, sautéed vegetables, cilantro, green onions, and sauce in a large bowl.
  5. 5. Portion into bowls and top with roasted peanuts.
