Peanut Soba Noodle Bowl

The sauce

cup
creamy peanut butter

rice vinegar

garlic, minced and crushed into a paste

toasted sesame oil

reduced-sodium tamari

crushed red pepper flakes

hot water
Instructions
- 1. Boil a large pot of water and cook the soba noodles according to package instructions. Drain and rinse with cold water.
- 2. Sauté the broccoli and red peppers in vegetable oil over medium-high heat for about 5 minutes.
- 3. Whisk together the sauce ingredients, adding hot water until you achieve a thin yogurt-like consistency.
- 4. Combine the cooked noodles, sautéed vegetables, cilantro, green onions, and sauce in a large bowl.
- 5. Portion into bowls and top with roasted peanuts.
