Ingredients

Soba and broccoli rabe

  • 6 ounces soba noodles or whole grain spaghetti
  • 1 pound broccoli rabe
  • 2 tablespoons extra-virgin olive oil
  • ¼ teaspoon fine salt

Peanut sauce

  • ½ cup creamy peanut butter
  • ¼ cup reduced-sodium tamari or reduced-sodium soy sauce
  • 3 tablespoons rice vinegar
  • 3 tablespoons water
  • 2 tablespoons honey or agave nectar
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, pressed or minced
  • ¼ teaspoon red pepper flakes, plus more for sprinkling

Garnishes

  • 1 small handful chopped fresh cilantro
  • 1 small lime wedge
  • ½ teaspoon sesame seeds

Instructions

  1. Prepare the broccoli rabe by rinsing and drying it, then trimming the tough ends.
  2. Make the peanut sauce by whisking together all sauce ingredients until well blended.
  3. Boil salted water in a large pot. Meanwhile, heat olive oil in a skillet and sauté the broccoli rabe with salt and red pepper flakes until wilted.
  4. Cook the soba noodles in boiling water until al dente, about 5 minutes, then drain and return to the pot.
  5. Combine the cooked noodles with the broccoli rabe and peanut sauce, mixing until blended.
  6. Serve in bowls, garnishing with cilantro, lime juice, sesame seeds, and additional red pepper flakes if desired.
