Instructions
- Prepare the broccoli rabe by rinsing and drying it, then trimming the tough ends.
- Make the peanut sauce by whisking together all sauce ingredients until well blended.
- Boil salted water in a large pot. Meanwhile, heat olive oil in a skillet and sauté the broccoli rabe with salt and red pepper flakes until wilted.
- Cook the soba noodles in boiling water until al dente, about 5 minutes, then drain and return to the pot.
- Combine the cooked noodles with the broccoli rabe and peanut sauce, mixing until blended.
- Serve in bowls, garnishing with cilantro, lime juice, sesame seeds, and additional red pepper flakes if desired.
