Instructions
- Cook the soba noodles according to package instructions, adding the broccoli in the last 30 seconds.
- Drain the noodles and broccoli and set aside.
- Heat a large skillet over high heat and coat with cooking spray.
- Add the tofu and mushrooms to the skillet and reduce heat to medium-high, cooking until golden brown for 5-10 minutes.
- Add the shrimp and remaining vegetables to the skillet and sauté for 1-2 minutes.
- Add the tamari sauce, cooked noodles, and broccoli, then drizzle with sesame oil and toss to combine.
- Transfer to a serving bowl and garnish with sesame seeds and green onions.
