Sesame Tofu and Shrimp Soba Noodles

Ingredients

The noodles and protein

  • 80 g soba noodles
  • 75 g extra firm tofu
  • 6 pieces tail on cooked shrimp

The vegetables

  • 5 pieces mushrooms
  • 1 cup broccoli florets
  • ¼ piece red bell pepper
  • 1 piece carrot
  • 2 pieces bird’s eye chili peppers
  • 2 pieces green onions
  • 10 g ginger

The sauce and garnish

  • 1 tsp tamari sauce
  • to taste sesame oil
  • to taste sesame seeds

Instructions

  1. Cook the soba noodles according to package instructions, adding the broccoli in the last 30 seconds.
  2. Drain the noodles and broccoli and set aside.
  3. Heat a large skillet over high heat and coat with cooking spray.
  4. Add the tofu and mushrooms to the skillet and reduce heat to medium-high, cooking until golden brown for 5-10 minutes.
  5. Add the shrimp and remaining vegetables to the skillet and sauté for 1-2 minutes.
  6. Add the tamari sauce, cooked noodles, and broccoli, then drizzle with sesame oil and toss to combine.
  7. Transfer to a serving bowl and garnish with sesame seeds and green onions.
