Spicy-Tahini Soba Noodle Salad

Ingredients

The noodles

  • 6 ounces dried soba noodles
  • 1 carrot, peeled and julienned
  • 1 small bunch broccolini, cleaned and ends trimmed
  • 3-4 shiitake mushrooms, thinly sliced

The dressing

  • ¼ cup tahini
  • teaspoons sesame chile oil
  • teaspoons honey
  • ¼ teaspoon zested fresh ginger
  • 2-4 tablespoons room temperature water
  • ¼ teaspoon salt, or to taste

Garnish

  • black sesame seeds

Instructions

  1. 1. Cook the soba noodles in boiling salted water for about 5 minutes, then drain and rinse in cold water.
  2. 2. In a small bowl, whisk together tahini, sesame chile oil, honey, and ginger until smooth. Add water gradually until the dressing reaches desired consistency.
  3. 3. Remove noodles from the refrigerator and mix with the dressing and julienned carrots.
  4. 4. In a sauté pan, heat olive oil and cook broccolini for 2 minutes, then add mushrooms and cook for another minute.
  5. 5. Serve the noodles topped with broccolini and mushrooms, garnished with sesame seeds.
