Spicy-Tahini Soba Noodle Salad

The dressing

tahini

sesame chile oil

zested fresh ginger

Instructions
- 1. Cook the soba noodles in boiling salted water for about 5 minutes, then drain and rinse in cold water.
- 2. In a small bowl, whisk together tahini, sesame chile oil, honey, and ginger until smooth. Add water gradually until the dressing reaches desired consistency.
- 3. Remove noodles from the refrigerator and mix with the dressing and julienned carrots.
- 4. In a sauté pan, heat olive oil and cook broccolini for 2 minutes, then add mushrooms and cook for another minute.
- 5. Serve the noodles topped with broccolini and mushrooms, garnished with sesame seeds.
