Sesame-Ginger and Cucumber Soba Noodles

Ingredients

The noodles and vegetables

  • 8 ounces soba noodles
  • 1 large or 2 small English cucumbers
  • 1 bunch scallions

The sauce

  • cup tahini
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh ginger
  • 1 tablespoon white miso (optional)
  • 2 teaspoons reduced sodium tamari or soy sauce
  • 1 teaspoon toasted sesame oil
  • 1 handful fresh cilantro
  • pinch red pepper flakes
  • ⅓ to ½ cup water
  • 2 tablespoons sesame seeds
  • to taste sea salt

Instructions

  1. 1. Boil salted water and cook the soba noodles until al dente, then drain and rinse under cold water.
  2. 2. Slice the cucumber into long strips, discarding the seedy inside.
  3. 3. In a bowl, whisk together tahini, rice vinegar, ginger, miso, tamari/soy sauce, sesame oil, cilantro, and red pepper flakes, adding water to reach desired consistency.
  4. 4. Toss the soba noodles in the sauce, then add cucumber strips, scallions, sesame seeds, and extra cilantro if desired.
  5. 5. Season to taste with salt or additional tamari and serve immediately.
