Sesame-Ginger and Cucumber Soba Noodles

Instructions
- 1. Boil salted water and cook the soba noodles until al dente, then drain and rinse under cold water.
- 2. Slice the cucumber into long strips, discarding the seedy inside.
- 3. In a bowl, whisk together tahini, rice vinegar, ginger, miso, tamari/soy sauce, sesame oil, cilantro, and red pepper flakes, adding water to reach desired consistency.
- 4. Toss the soba noodles in the sauce, then add cucumber strips, scallions, sesame seeds, and extra cilantro if desired.
- 5. Season to taste with salt or additional tamari and serve immediately.
