Ingredients

The dressing

  • ¼ cup rice vinegar
  • 2 tablespoons tamari
  • ½ teaspoon toasted sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic
  • ½ teaspoon maple syrup or honey

The noodles and toppings

  • 6 ounces soba noodles
  • 2 pieces avocados, sliced
  • 2 cups blanched snap peas
  • ¼ cup edamame
  • 1 piece watermelon radish or 2 red radishes, very thinly sliced
  • ¼ cup fresh mint leaves
  • to taste sesame seeds
  • 1 wedge lemon

Instructions

  1. Prepare the dressing by whisking together rice vinegar, tamari, sesame oil, ginger, garlic, and maple syrup in a small bowl.
  2. Bring a pot of unsalted water to a boil and cook the soba noodles according to the package directions.
  3. Drain the noodles and rinse them well in cold water to remove excess starch.
  4. Toss the noodles with the prepared dressing and divide them into bowls.
  5. Squeeze fresh lemon juice onto the avocado slices and add them to the bowls along with snap peas, edamame, radish, mint, and sesame seeds.
  6. Drizzle with additional tamari or sesame oil if desired.
