Instructions
- Prepare the dressing by whisking together rice vinegar, tamari, sesame oil, ginger, garlic, and maple syrup in a small bowl.
- Bring a pot of unsalted water to a boil and cook the soba noodles according to the package directions.
- Drain the noodles and rinse them well in cold water to remove excess starch.
- Toss the noodles with the prepared dressing and divide them into bowls.
- Squeeze fresh lemon juice onto the avocado slices and add them to the bowls along with snap peas, edamame, radish, mint, and sesame seeds.
- Drizzle with additional tamari or sesame oil if desired.
