Ginger Soba Noodles

The ginger dressing

brown sugar or honey

brown rice vinegar

celery, chopped

sunflower oil or untoasted sesame oil

chopped tarragon
The toppings

a few big handfuls
cubed tofu, pan-fried or baked until golden

⅓
cup
toasted squash seeds, pumpkin seeds, walnuts, or sesame seeds
Instructions
- Cook the soba noodles in salted water, then drain and rinse under cold water.
- In a food processor, combine ginger, sesame oil, lemon zest and juice, onion, mirin, sugar, salt, vinegar, celery, and sunflower oil. Blend until smooth and strain.
- In a large bowl, toss the soba noodles with most of the tarragon, tofu, most of the seeds/nuts, and about ⅔ of the dressing.
- Adjust seasoning and add more dressing if needed.
- Serve with lemon wedges and finish with remaining tarragon and seeds.
