Cold Soba Noodles

Ingredients

The paste

  • 4 pieces scallions
  • 5 pieces medium shallots
  • 2 tablespoons grated ginger
  • 1 teaspoon fine grain sea salt
  • 7 tablespoons sunflower or olive oil

The main dish

  • 12 ounces extra-firm tofu
  • 12 ounces dried soba noodles
  • 1 piece radish
  • cup toasted pine nuts
  • 1 bunch chives

Instructions

  1. Boil a large pot of water.
  2. Prepare the scallions, shallots, and ginger in a mortar and pestle with salt.
  3. Heat oil in a small saucepan and combine with the scallion mixture, then let cool.
  4. Prepare the tofu by draining, patting dry, and cutting into matchsticks or cubes.
  5. Cook the tofu in a skillet until browned and firm.
  6. Cook the soba noodles according to package instructions, then drain and rinse with cold water.
  7. Toss the noodles with some of the scallion-ginger oil to prevent sticking.
  8. Serve the soba with the scallion-ginger paste, topped with radish, pine nuts, and chives.
