Instructions
- Boil a large pot of water.
- Prepare the scallions, shallots, and ginger in a mortar and pestle with salt.
- Heat oil in a small saucepan and combine with the scallion mixture, then let cool.
- Prepare the tofu by draining, patting dry, and cutting into matchsticks or cubes.
- Cook the tofu in a skillet until browned and firm.
- Cook the soba noodles according to package instructions, then drain and rinse with cold water.
- Toss the noodles with some of the scallion-ginger oil to prevent sticking.
- Serve the soba with the scallion-ginger paste, topped with radish, pine nuts, and chives.
