Ingredients

The noodles and tofu

  • 8 ounces dried soba noodles
  • 12 ounces extra firm organic tofu
  • 3/4 cup bread crumbs
  • 1/4 cup Parmesan cheese, freshly grated
  • 2 eggs lightly beaten
  • a generous splash olive oil

The vegetables and seasoning

  • 1 bunch green onions
  • 4 big handfuls chard, spinach or kale
  • 1 teaspoon garlic powder
  • 1/2 cup Parmesan cheese, freshly grated
  • a few baby radishes

Instructions

  1. Boil water and cook soba noodles according to package instructions, then drain.
  2. Prepare the tofu by coating it in a mixture of bread crumbs, Parmesan, and salt after dipping in beaten eggs.
  3. Bake or pan-fry the breaded tofu until golden, then slice it into strips.
  4. In a skillet, heat olive oil and sauté green onions and chard until the greens wilt.
  5. Add the cooked soba noodles, garlic powder, and Parmesan to the skillet and mix well.
  6. Serve the noodles topped with sliced radishes and tofu.
