Grilled Tofu & Soba Noodles

Ingredients

The noodles

  • 12 ounces dried soba noodles
  • 2 teaspoons extra-virgin olive oil

The tofu

  • 16 oz extra-firm tofu
  • a bit more to taste olive oil

The dressing

  • 3 medium cloves garlic
  • scant ¾ teaspoon fine grain sea salt
  • 3 small/medium shallots
  • 3 small serrano peppers
  • 1 bunch cilantro
  • 1 teaspoon natural cane sugar
  • 2 teaspoons fresh lime juice
  • ¾ cup extra-virgin olive oil

Instructions

  1. Boil water in a large pot and cook the soba noodles according to package instructions, being careful not to overcook.
  2. Drain the noodles, rinse under cold water, and toss with olive oil before refrigerating.
  3. Prepare the dressing by pounding garlic and salt into a paste, then adding shallots, peppers, and cilantro until smooth.
  4. Stir in sugar and lime juice, then gradually add olive oil, adjusting flavors as needed.
  5. Cut tofu into slabs, rub with olive oil, and grill until golden brown on both sides.
  6. To assemble, toss soba noodles with dressing, place grilled tofu on top, and drizzle with additional dressing.
