Instructions
- Boil water in a large pot and cook the soba noodles according to package instructions, being careful not to overcook.
- Drain the noodles, rinse under cold water, and toss with olive oil before refrigerating.
- Prepare the dressing by pounding garlic and salt into a paste, then adding shallots, peppers, and cilantro until smooth.
- Stir in sugar and lime juice, then gradually add olive oil, adjusting flavors as needed.
- Cut tofu into slabs, rub with olive oil, and grill until golden brown on both sides.
- To assemble, toss soba noodles with dressing, place grilled tofu on top, and drizzle with additional dressing.
