Ingredients

Cashew Sauce

  • 2 tablespoons tamari
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh orange juice
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon minced ginger
  • 2 tablespoons cashew butter
  • 2 tablespoons water

Noodles and Vegetables

  • 8 ounces soba noodles
  • 1 medium head broccoli, florets chopped, stems thinly sliced
  • 2 scallions, sliced
  • 1 medium carrot, thinly sliced
  • 4 to 6 ounces baked tofu, cubed and warmed
  • ΒΌ cup toasted cashews, crushed
  • as needed sriracha, for serving

Instructions

  1. Prepare the cashew sauce by mixing tamari, lime juice, orange juice, sesame oil, garlic, ginger, cashew butter, and water in a bowl until smooth.
  2. Cook the soba noodles according to package directions, then drain and rinse to remove excess starch.
  3. Steam the broccoli florets and stems along with scallions in a steamer basket for 2 to 4 minutes until tender but bright green.
  4. Assemble the bowls by combining soba noodles, steamed broccoli, scallions, carrots, tofu, and cashews.
  5. Top with the cashew sauce and serve with additional tamari and sriracha on the side.
