Instructions
- Prepare the cashew sauce by mixing tamari, lime juice, orange juice, sesame oil, garlic, ginger, cashew butter, and water in a bowl until smooth.
- Cook the soba noodles according to package directions, then drain and rinse to remove excess starch.
- Steam the broccoli florets and stems along with scallions in a steamer basket for 2 to 4 minutes until tender but bright green.
- Assemble the bowls by combining soba noodles, steamed broccoli, scallions, carrots, tofu, and cashews.
- Top with the cashew sauce and serve with additional tamari and sriracha on the side.
