Broccoli and Shiitake Mushrooms with Soba Noodles

Ingredients

The vegetables

  • 1 pound broccoli florets
  • 8 ounces shiitake mushrooms

The noodles

  • 4 ounces soba noodles

The sauce

  • ¼ cup ponzu
  • ½ lemon zest

The fats

  • 2 tablespoons butter
  • 1 tablespoon olive oil

Seasoning

  • to taste kosher salt
  • to taste freshly ground pepper
  • for garnish sesame seeds

Instructions

  1. Boil water in a medium saucepan and blanch the broccoli for 30 seconds to 1 minute until bright green.
  2. Remove the broccoli and set aside, then cook the soba noodles in the same boiling water according to package directions.
  3. In a large sauté pan, melt 1 tablespoon of butter with olive oil over medium-high heat.
  4. Add the mushrooms and cook without stirring for 2-3 minutes, then stir and reduce heat to medium.
  5. Add the broccoli and ponzu sauce to the pan and cook for an additional 2-3 minutes.
  6. Stir in the remaining tablespoon of butter and season with salt and pepper.
  7. Garnish with lemon zest and sesame seeds, and serve over soba noodles or mix them together in the pan.
