Broccoli and Shiitake Mushrooms with Soba Noodles

Instructions
- Boil water in a medium saucepan and blanch the broccoli for 30 seconds to 1 minute until bright green.
- Remove the broccoli and set aside, then cook the soba noodles in the same boiling water according to package directions.
- In a large sauté pan, melt 1 tablespoon of butter with olive oil over medium-high heat.
- Add the mushrooms and cook without stirring for 2-3 minutes, then stir and reduce heat to medium.
- Add the broccoli and ponzu sauce to the pan and cook for an additional 2-3 minutes.
- Stir in the remaining tablespoon of butter and season with salt and pepper.
- Garnish with lemon zest and sesame seeds, and serve over soba noodles or mix them together in the pan.
