Instructions
- Prepare the marinade for the tofu and let it marinate for about 30 minutes.
- Preheat the oven and bake the marinated tofu for about 30 minutes, flipping halfway through.
- Toss the asparagus, carrots, and onion with oil and roast in the oven until tender.
- Cook the soba noodles according to package directions and mix with the sauce ingredients.
- Serve the noodles topped with roasted veggies and baked tofu, garnished with scallions, sesame seeds, and black pepper.
