Ingredients

Baked Tofu

  • ¼ cup soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 2 tablespoons maple syrup
  • 2 teaspoons freshly grated ginger
  • 2 teaspoons sriracha sauce
  • 1 teaspoon sesame oil
  • 1 pound extra-firm tofu

Roasted Veggies

  • 20 spears asparagus
  • 2 medium carrots
  • ½ medium red onion
  • 1 tablespoon vegetable oil
  • to taste salt and pepper

Sesame Soba Noodles

  • 3 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 2 cloves garlic
  • 8 ounces dried soba noodles

For Serving

  • 2 scallions chopped
  • to taste toasted sesame seeds
  • to taste black pepper

Instructions

  1. Prepare the marinade for the tofu and let it marinate for about 30 minutes.
  2. Preheat the oven and bake the marinated tofu for about 30 minutes, flipping halfway through.
  3. Toss the asparagus, carrots, and onion with oil and roast in the oven until tender.
  4. Cook the soba noodles according to package directions and mix with the sauce ingredients.
  5. Serve the noodles topped with roasted veggies and baked tofu, garnished with scallions, sesame seeds, and black pepper.
