Instructions
- Preheat the oven to 400°F and prepare a baking sheet with oil.
- Cut the tofu into 1-inch cubes and mix the marinade ingredients.
- Place the tofu on the baking sheet, drizzle half the marinade, and bake for 15 minutes.
- Flip the tofu and bake for another 15 minutes, then drizzle the remaining marinade.
- Cook the jasmine rice according to package instructions or in an Instant Pot.
- Stir-fry the broccoli slaw in oil for 3-4 minutes, adding soy sauce at the end.
- Mix the vegan mayo with sriracha and thin with water.
- Assemble the bowls with rice, tofu, broccoli slaw, and drizzle with sriracha mayo, garnishing with cucumbers, sesame seeds, and scallions.
