Sesame Soy Tofu Bowls

Ingredients

The Tofu

  • 2 packages Super Firm Tofu
  • ¼ cup Soy Sauce
  • 1 tbsp Chili Paste
  • ½ tbsp Sesame oil
  • ½ tbsp Sesame Seeds

The Rice

  • 4 cups Jasmine Rice

The Sauce

  • 3 tbsp Honey or Maple Syrup
  • ½ cup Vegan Mayonnaise
  • 1 tbsp Sriracha
  • 1-2 tbsp water

The Vegetables

  • 4 cups Broccoli Slaw
  • Sesame Seeds For Garnish
  • Scallions For Garnish
  • Sliced Cucumbers For Garnish

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with oil.
  2. Cut the tofu into 1-inch cubes and mix the marinade ingredients.
  3. Place the tofu on the baking sheet, drizzle half the marinade, and bake for 15 minutes.
  4. Flip the tofu and bake for another 15 minutes, then drizzle the remaining marinade.
  5. Cook the jasmine rice according to package instructions or in an Instant Pot.
  6. Stir-fry the broccoli slaw in oil for 3-4 minutes, adding soy sauce at the end.
  7. Mix the vegan mayo with sriracha and thin with water.
  8. Assemble the bowls with rice, tofu, broccoli slaw, and drizzle with sriracha mayo, garnishing with cucumbers, sesame seeds, and scallions.
