Ingredients

The slaw

  • 4 ounces soba noodles or whole wheat spaghetti
  • 16 ounces purple or green cabbage
  • ½ pound Brussels sprouts
  • 4 units carrots
  • 1 bunch green onions

The peanut-sesame dressing

  • ½ cup peanut butter
  • 3 tablespoons white wine vinegar or rice vinegar
  • 3 tablespoons toasted sesame oil
  • 3 tablespoons reduced-sodium tamari or soy sauce
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon fresh ginger
  • 2 cloves garlic

Garnish

  • 1 sprinkle coarsely chopped peanuts
  • 1 handful cilantro
  • 1 unit lime
  • to taste units sriracha or chili-garlic sauce

Instructions

  1. Cook the soba noodles according to package directions, then drain and rinse with cold water.
  2. Shred the cabbage and Brussels sprouts, and grate the carrots using a food processor or a chef's knife.
  3. Whisk together the dressing ingredients until smooth, adjusting consistency with water if necessary.
  4. Combine the cooked noodles, shredded vegetables, and green onions in a large bowl, then pour the dressing over and toss to coat.
  5. Let the slaw marinate for 20 minutes before serving, then garnish with peanuts, cilantro, and lime wedges.
