Soba Noodle Salad with Peanut Dressing

The salad

dried soba noodles

cucumbers or 1 large English cucumber

peanuts, roasted and unsalted

Peanut Dressing

hot sauce of choice, Sriracha or Sambal Oelek
Instructions
- Make the dressing by whisking peanut butter with hot water until blended, then stir in remaining ingredients and adjust seasoning to taste. Chill in the fridge.
- Bring a pot of water to a boil, then add soba noodles and simmer gently for about 4 minutes or according to package instructions. Drain and rinse under cold water.
- Let the noodles dry, then julienne the cucumbers and chop the scallions and peanuts.
- In a large bowl, combine the noodles, cucumbers, scallions, and peanuts. Pour the dressing over and toss to combine. Serve with additional hot sauce on the side.
