Ingredients

Peanut Lime Dressing

  • 3 Tbsp natural-style peanut butter
  • 1 Tbsp brown sugar
  • 1 clove garlic, minced
  • ½ tsp grated fresh ginger
  • 1 medium lime, juiced
  • 2 tsp soy sauce
  • ¼ cup neutral oil

Salad

  • 8 oz whole wheat spaghetti
  • 4 cups finely shredded red cabbage
  • 2 carrots
  • ½ bunch cilantro, chopped
  • 4 green onions, sliced
  • ½ cup peanuts, chopped

Instructions

  1. Make the peanut lime dressing by combining all dressing ingredients in a bowl or blender and blend until smooth.
  2. Boil water in a pot and cook the spaghetti until tender, then drain and rinse with cold water.
  3. Finely shred the red cabbage and carrots, chop the cilantro and peanuts, and slice the green onions.
  4. In a large bowl, combine the cooled spaghetti with the cabbage, carrots, cilantro, green onions, and peanuts, and toss well.
  5. Serve immediately with the dressing or store the undressed salad and dressing separately in containers.
