Instructions
- Make the peanut lime dressing by combining all dressing ingredients in a bowl or blender and blend until smooth.
- Boil water in a pot and cook the spaghetti until tender, then drain and rinse with cold water.
- Finely shred the red cabbage and carrots, chop the cilantro and peanuts, and slice the green onions.
- In a large bowl, combine the cooled spaghetti with the cabbage, carrots, cilantro, green onions, and peanuts, and toss well.
- Serve immediately with the dressing or store the undressed salad and dressing separately in containers.
