Ingredients

Soba Noodle Salad

  • 9.5 ounces dried soba noodles
  • 8 ounces fresh snow peas
  • 1 medium carrot
  • 3 pieces green onions
  • cup peanuts

Peanut Sauce Dressing

  • 1 tablespoon rice vinegar
  • 2 tablespoons orange juice
  • 1 tablespoon agave nectar
  • 3 tablespoons reduced sodium soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons creamy peanut butter
  • ½ teaspoon minced fresh ginger
  • 2 medium garlic cloves
  • ¼ teaspoon crushed red pepper

Instructions

  1. Boil water in a medium pot and cook the soba noodles for about 4 minutes, then rinse with cold water.
  2. Transfer the cooled noodles to a bowl and add the snow peas, carrot, and green onions, tossing gently.
  3. Whisk together the ingredients for the peanut sauce in a small dish.
  4. Add the peanut sauce to the noodle mixture and toss to combine, then sprinkle with peanuts.
  5. Serve at room temperature or chill until ready to serve.
