Sesame Noodle Salad with Peas

Ingredients

Noodles

  • 9.5 ounces dried udon or soba noodles
  • to taste none water

Sesame Dressing

  • 1 ½ tablespoons sesame oil
  • 2 tablespoons peanut butter
  • 1 none lemon, juiced
  • 3 tablespoons soy sauce
  • 1 tablespoon agave syrup
  • 1 teaspoon minced fresh ginger
  • 1 clove garlic, minced
  • ¼ teaspoon crushed red pepper

Vegetables

  • 8 ounces fresh snow peas or snap peas, trimmed and halved
  • 2 small carrots, sliced into small matchsticks
  • 1 small bell pepper, sliced
  • 3 none green onions, sliced
  • ½ cup chopped fresh cilantro

Garnish

  • 1 tablespoon sesame seeds

Instructions

  1. Boil water in a medium pot and cook the udon or soba noodles until tender, then rinse with cold water.
  2. Whisk together sesame oil, peanut butter, lemon juice, soy sauce, agave syrup, ginger, garlic, and crushed red pepper to make the dressing.
  3. In a large bowl, combine the cooled noodles with the dressing, then add the peas, carrots, bell pepper, green onions, and cilantro, tossing to mix.
  4. Sprinkle with sesame seeds and chill until ready to serve.
