Instructions
- Boil water in a medium pot and cook the udon or soba noodles until tender, then rinse with cold water.
- Whisk together sesame oil, peanut butter, lemon juice, soy sauce, agave syrup, ginger, garlic, and crushed red pepper to make the dressing.
- In a large bowl, combine the cooled noodles with the dressing, then add the peas, carrots, bell pepper, green onions, and cilantro, tossing to mix.
- Sprinkle with sesame seeds and chill until ready to serve.
