Ingredients

The sauce

  • 2 inches fresh ginger
  • ½ cup natural peanut butter
  • ½ cup hoisin sauce
  • cup hot water
  • ½ tsp sriracha hot sauce

The stir fry

  • 2 Tbsp vegetable oil
  • 2 cloves garlic
  • 1 lb. frozen stir fry vegetables
  • 8 oz. soba noodles
  • 2 sliced green onions (optional)

Instructions

  1. Prepare the sauce by peeling and grating 2 inches of ginger into a bowl and mixing it with peanut butter, hoisin sauce, sriracha hot sauce, and hot water until smooth.
  2. Heat 2 tablespoons of vegetable oil in a large skillet or wok, then add another inch of grated ginger and minced garlic, sautéing for 1-2 minutes.
  3. Add the frozen stir fry vegetables to the skillet and cook until heated through, ensuring not to overcrowd the pan.
  4. While the vegetables are cooking, boil water in a medium pot and cook the soba noodles for 5-6 minutes until soft, then drain.
  5. Combine the drained noodles with the cooked vegetables and the prepared peanut sauce, stirring until everything is well coated.
  6. Garnish with sliced green onions if desired and serve.
