Instructions
- Prepare the sauce by peeling and grating 2 inches of ginger into a bowl and mixing it with peanut butter, hoisin sauce, sriracha hot sauce, and hot water until smooth.
- Heat 2 tablespoons of vegetable oil in a large skillet or wok, then add another inch of grated ginger and minced garlic, sautéing for 1-2 minutes.
- Add the frozen stir fry vegetables to the skillet and cook until heated through, ensuring not to overcrowd the pan.
- While the vegetables are cooking, boil water in a medium pot and cook the soba noodles for 5-6 minutes until soft, then drain.
- Combine the drained noodles with the cooked vegetables and the prepared peanut sauce, stirring until everything is well coated.
- Garnish with sliced green onions if desired and serve.
