Easy Soba Noodles with Peanuts and Seitan

Instructions
- Heat the sesame oil in a large skillet or wok over medium heat.
- Add the bell pepper, peas, garlic, ginger, and chili pepper, and sauté for 5 minutes.
- Add the seitan and cook for an additional 1 minute.
- In a medium bowl, mix together the peanut butter, broth, orange juice, and soy sauce until well combined.
- Add the liquid mixture to the skillet with the vegetable mixture, then add the dried soba noodles.
- Cook, stirring for about 5 minutes, until the noodles and vegetables are just tender and the liquid has been absorbed.
- If needed, add additional water to achieve the desired consistency.
- Sprinkle with peanuts, green onions, and fresh basil or cilantro before serving.
