Easy Soba Noodles with Peanuts and Seitan

Ingredients

The noodles and sauce

  • 1 teaspoon sesame oil
  • 1 cup vegetable broth
  • 1/4 cup orange juice
  • 1 tablespoon reduced sodium soy sauce
  • 1 package soba noodles, dried (8-ounce)
  • 1/4 cup creamy peanut butter

The vegetables

  • 1 medium bell pepper (red, yellow, or orange), coarsely chopped
  • 1 cup peas, frozen
  • 1 medium garlic clove, minced
  • 1 teaspoon fresh shredded ginger
  • 1 small chili pepper, finely diced (or 1/4 teaspoon red pepper flakes)
  • 3 tablespoons coarsely chopped roasted peanuts
  • 3 green onions, white and green parts, sliced
  • 1 tablespoon chopped basil or cilantro

The protein

  • 1 package seitan, sliced, drained (8-ounce)

Instructions

  1. Heat the sesame oil in a large skillet or wok over medium heat.
  2. Add the bell pepper, peas, garlic, ginger, and chili pepper, and sauté for 5 minutes.
  3. Add the seitan and cook for an additional 1 minute.
  4. In a medium bowl, mix together the peanut butter, broth, orange juice, and soy sauce until well combined.
  5. Add the liquid mixture to the skillet with the vegetable mixture, then add the dried soba noodles.
  6. Cook, stirring for about 5 minutes, until the noodles and vegetables are just tender and the liquid has been absorbed.
  7. If needed, add additional water to achieve the desired consistency.
  8. Sprinkle with peanuts, green onions, and fresh basil or cilantro before serving.
