Ingredients

The noodles

  • 2 ounces uncooked soba noodles

The stir fry

  • ½ tablespoon toasted sesame oil
  • ½ teaspoon minced garlic
  • ½ teaspoon ground ginger
  • ¼ cup chopped onion
  • ¼ cup chopped bell pepper
  • ¼ cup broccoli florets
  • 1 large pasture-raised egg
  • 1 tablespoon coconut aminos
  • 1 tablespoon Sriracha sauce
  • 1 tablespoon creamy nut butter

Instructions

  1. Boil water in a medium pot and cook the soba noodles for 4 to 6 minutes until tender.
  2. In a large skillet, heat sesame oil over medium heat and add garlic, ginger, onion, bell pepper, and broccoli. Cook covered for 3 to 4 minutes until softened.
  3. Strain the soba noodles and add them to the skillet with the vegetables.
  4. Push the mixture to one side, crack the egg into the skillet, and scramble it before mixing it with the noodles and vegetables.
  5. Add coconut aminos, Sriracha, and nut butter, then mix well and serve warm.
