Ingredients

Peanut Sauce

  • 1 cup reduced sodium chicken broth
  • 5 tbsp Better n Peanut Butter
  • 1 tbsp sriracha chili sauce
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp freshly grated ginger
  • 2 cloves garlic

Chicken and Noodles

  • 16 oz chicken breast
  • to taste salt and pepper
  • 1 tbsp sriracha chili sauce
  • ½ juice of a lime
  • 4 cloves garlic
  • 1 tbsp fresh ginger
  • 1 tbsp soy sauce
  • ½ tbsp sesame oil
  • 8 oz rice noodles
  • ¾ cup green onion
  • cups shredded carrots
  • cups shredded broccoli slaw
  • 1 cup bean sprouts
  • 2 tbsp chopped peanuts
  • 1 lime sliced
  • to taste cilantro for garnish

Instructions

  1. Prepare the peanut sauce by combining chicken broth, peanut butter, sriracha, honey, soy sauce, ginger, and crushed garlic in a saucepan and simmer until smooth.
  2. Boil water and cook the rice noodles according to package instructions.
  3. Season the chicken with salt, pepper, sriracha, lime juice, garlic, ginger, and soy sauce.
  4. Heat a skillet or wok and sauté the chicken until cooked through, then set aside.
  5. In the same skillet, sauté garlic, scallions, carrots, broccoli slaw, and bean sprouts until tender-crisp.
  6. Drain the noodles and toss them with the peanut sauce and additional chicken broth if needed.
  7. Combine the cooked chicken with the noodles and divide into bowls.
  8. Top with sautéed vegetables, bean sprouts, chopped peanuts, and garnish with cilantro and lime wedges.
