Instructions
- Prepare the peanut sauce by combining chicken broth, peanut butter, sriracha, honey, soy sauce, ginger, and crushed garlic in a saucepan and simmer until smooth.
- Boil water and cook the rice noodles according to package instructions.
- Season the chicken with salt, pepper, sriracha, lime juice, garlic, ginger, and soy sauce.
- Heat a skillet or wok and sauté the chicken until cooked through, then set aside.
- In the same skillet, sauté garlic, scallions, carrots, broccoli slaw, and bean sprouts until tender-crisp.
- Drain the noodles and toss them with the peanut sauce and additional chicken broth if needed.
- Combine the cooked chicken with the noodles and divide into bowls.
- Top with sautéed vegetables, bean sprouts, chopped peanuts, and garnish with cilantro and lime wedges.
