Healthy Jambalaya with Sausage & Shrimp

Ingredients

  • 1 pound sausage (like Aidell’s chicken-apple sausage, sliced)
  • 1 ½ tablespoons olive oil or avocado oil
  • 4 cloves garlic (minced)
  • 1 red bell pepper deseeded and chopped (about 1 ½ cups)
  • 1 green bell pepper deseeded and chopped (about 1 ½ cups)
  • 1 stick celery (thinly sliced)
  • ½ one onion (chopped)
  • 1 ½ – 2 tablespoons Cajun seasoning
  • 1 teaspoon black pepper
  • ½ – 1 ½ teaspoons salt
  • teaspoon cayenne pepper (optional)
  • 2 14.5-ounce cans fire-roasted tomatoes
  • 1 cup chicken broth
  • 5 cups frozen cauliflower rice
  • 1 pound medium raw shrimp (peeled)
  • to taste green onions (sliced, for garnish)
  • to taste fresh parsley (chopped, for garnish)
  • to taste Louisiana hot sauce (to serve, optional)

Instructions

  1. Heat ½ tablespoon of oil in a large pot over medium heat and brown the sausage.
  2. Transfer the sausage to a plate and add 1 tablespoon of oil to the pot.
  3. Sauté garlic, onion, bell peppers, and celery until softened, about 5-7 minutes.
  4. Stir in Cajun seasoning, black pepper, salt, and optional cayenne pepper.
  5. Add fire-roasted tomatoes, chicken broth, and sausage, then bring to a boil.
  6. Reduce heat to low and simmer for 25-35 minutes until thickened.
  7. Stir in shrimp and cauliflower rice, cooking until heated through and shrimp are pink.
  8. Serve garnished with green onions and parsley, with hot sauce on the side.
