Healthy Jambalaya with Sausage & Shrimp

Instructions
- Heat ½ tablespoon of oil in a large pot over medium heat and brown the sausage.
- Transfer the sausage to a plate and add 1 tablespoon of oil to the pot.
- Sauté garlic, onion, bell peppers, and celery until softened, about 5-7 minutes.
- Stir in Cajun seasoning, black pepper, salt, and optional cayenne pepper.
- Add fire-roasted tomatoes, chicken broth, and sausage, then bring to a boil.
- Reduce heat to low and simmer for 25-35 minutes until thickened.
- Stir in shrimp and cauliflower rice, cooking until heated through and shrimp are pink.
- Serve garnished with green onions and parsley, with hot sauce on the side.
