Ingredients

  • 2 tablespoons ghee or coconut oil
  • pounds boneless lamb shoulder or beef chuck roast, cut into 1½-inch cubes
  • 2 onions, coarsely chopped
  • 2 large carrots, coarsely chopped
  • 2 heaping tablespoons Rogan Josh seasoning
  • ½ cup full fat coconut yogurt or coconut milk
  • teaspoons Diamond Crystal kosher salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Preheat the oven to 300°F with the rack in the middle.
  2. Melt the ghee in a large Dutch oven over medium low heat.
  3. Add the lamb, onions, carrots, Rogan Josh seasoning, salt, and pepper to the pot.
  4. Stir the mixture constantly for 5-8 minutes, or until the spices are fragrant.
  5. Mix in ½ cup of water and the coconut yogurt, then increase the heat to high to bring the contents to a simmer.
  6. Place the lid on the pot and place the stew in the oven for around two hours or until the lamb is fork tender.
  7. Remove the stew from the oven and adjust the seasoning with salt and pepper to taste.
  8. Serve over Simple Cauliflower Rice or alongside roasted vegetables.
