Ingredients

  • 2 cups almond flour
  • cup cocoa powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 3 eggs
  • ¼ cup coconut oil (melted)
  • cup maple syrup
  • 1 tsp vanilla
  • 1 cup finely shredded zucchini
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a muffin tin with cupcake liners or non-stick spray.
  2. In a small bowl, whisk together almond flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, whisk the eggs, then add coconut oil, maple syrup, and vanilla, stirring until well combined.
  4. Add the dry ingredients to the wet ingredients and mix until combined.
  5. Fold in the shredded zucchini and half of the chocolate chips.
  6. Scoop the batter into the muffin tins until ¾ full, topping with the remaining chocolate chips.
  7. Bake for 19-21 minutes or until a toothpick inserted in the middle comes out clean.
