Instructions
- Preheat the oven to 350°F and line a muffin tin with cupcake liners or non-stick spray.
- In a small bowl, whisk together almond flour, cocoa powder, baking soda, and salt. Set aside.
- In a large bowl, whisk the eggs, then add coconut oil, maple syrup, and vanilla, stirring until well combined.
- Add the dry ingredients to the wet ingredients and mix until combined.
- Fold in the shredded zucchini and half of the chocolate chips.
- Scoop the batter into the muffin tins until ¾ full, topping with the remaining chocolate chips.
- Bake for 19-21 minutes or until a toothpick inserted in the middle comes out clean.
