Ingredients

  • 1 cup whole wheat pastry flour
  • ¼ cup almond flour
  • ¼ cup cocoa powder
  • cup coconut sugar
  • 1 ¼ tsp baking powder
  • ¾ tsp baking soda
  • ½ tsp fine sea salt
  • ½ tsp cinnamon
  • 3 small over-ripe bananas, mashed
  • 1 heaping cup grated zucchini
  • 1 tbsp non-dairy milk
  • 1 tsp vanilla extract
  • ¼ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin.
  2. In a medium bowl, mix together the dry ingredients: flour, almond flour, cocoa powder, coconut sugar, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, mash the bananas and then mix in the zucchini, non-dairy milk, and vanilla.
  4. Combine the dry mixture with the wet mixture, stirring until just combined, then fold in the chocolate chips.
  5. Fill the muffin tin with the batter and top with additional chocolate chips.
  6. Bake for 20-22 minutes or until a knife comes out clean. Allow to cool on a wire rack.
