Instructions
- Preheat the oven to 350°F and prepare a muffin tin.
- In a medium bowl, mix together the dry ingredients: flour, almond flour, cocoa powder, coconut sugar, baking powder, baking soda, salt, and cinnamon.
- In a large bowl, mash the bananas and then mix in the zucchini, non-dairy milk, and vanilla.
- Combine the dry mixture with the wet mixture, stirring until just combined, then fold in the chocolate chips.
- Fill the muffin tin with the batter and top with additional chocolate chips.
- Bake for 20-22 minutes or until a knife comes out clean. Allow to cool on a wire rack.
