Easy Vegetable Beef Soup

Ingredients

  • 1 medium yellow onion
  • 2 cloves garlic
  • 2 Tbsp olive oil
  • 1 lb. ground beef
  • ¾ lb. russet potato
  • 1 28 oz. can diced tomatoes
  • tsp Italian seasoning
  • ¼ tsp freshly cracked black pepper
  • 4 cups beef broth
  • 2 Tbsp Worcestershire sauce
  • 12 oz. frozen vegetables (corn, carrots, green beans)
  • to taste salt

Instructions

  1. Dice the onion and mince the garlic, then sauté them in olive oil until soft.
  2. Add the ground beef and cook until browned, draining excess fat if desired.
  3. Peel and dice the russet potato into ½-inch cubes.
  4. Add the cubed potatoes, diced tomatoes, Italian seasoning, pepper, beef broth, and Worcestershire sauce to the pot and stir.
  5. Bring the soup to a boil, then reduce heat and simmer for about 10 minutes until potatoes are tender.
  6. Stir in the frozen vegetables and simmer for an additional 5 minutes.
  7. Taste and add salt as needed to enhance the flavors.
