Easy Vegetable Beef Soup

Instructions
- Dice the onion and mince the garlic, then sauté them in olive oil until soft.
- Add the ground beef and cook until browned, draining excess fat if desired.
- Peel and dice the russet potato into ½-inch cubes.
- Add the cubed potatoes, diced tomatoes, Italian seasoning, pepper, beef broth, and Worcestershire sauce to the pot and stir.
- Bring the soup to a boil, then reduce heat and simmer for about 10 minutes until potatoes are tender.
- Stir in the frozen vegetables and simmer for an additional 5 minutes.
- Taste and add salt as needed to enhance the flavors.
