Ingredients

Wet Ingredients

  • ¼ cup apple sauce
  • ¼ cup honey
  • 6 drops vanilla liquid stevia
  • 3 large eggs
  • ½ cup coconut oil

Dry Ingredients

  • 2 cups almond meal flour
  • ½ cup buckwheat flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp sea salt

Fruits

  • 1 cup fresh strawberries, thinly sliced

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a bowl, combine apple sauce, honey, vanilla stevia, eggs, and liquified coconut oil, then beat with an electric mixer.
  3. Add almond meal flour, buckwheat flour, baking soda, baking powder, and sea salt to the mixture and beat again.
  4. Fold in the sliced strawberries.
  5. Spoon the batter into unbleached muffin cups, filling them almost to the top.
  6. Bake for about 24 minutes.
