Ingredients

  • 1 14-ounce can quality full-fat coconut milk
  • 1 cup unsweetened vanilla almond milk
  • 2-3 Tbsp matcha green tea powder
  • ¼ cup pitted medjool dates
  • ¼ cup honey (or maple syrup for vegan)
  • ¼ tsp xanthan gum

Instructions

  1. Blend coconut milk, almond milk, matcha, dates, and honey until well combined.
  2. Add xanthan gum and blend again, adjusting flavors as needed.
  3. Chill the mixture in a bowl for a few hours.
  4. Pour into a pre-chilled ice cream maker and churn according to the manufacturer's instructions.
  5. Serve immediately as soft serve or transfer to a container to freeze for 4-6 hours.
  6. Let sit at room temperature for 20-30 minutes before serving if frozen.
