Instructions
- Blend coconut milk, almond milk, matcha, dates, and honey until well combined.
- Add xanthan gum and blend again, adjusting flavors as needed.
- Chill the mixture in a bowl for a few hours.
- Pour into a pre-chilled ice cream maker and churn according to the manufacturer's instructions.
- Serve immediately as soft serve or transfer to a container to freeze for 4-6 hours.
- Let sit at room temperature for 20-30 minutes before serving if frozen.
