Coffee Coconut Ice Cream

Ingredients

  • 2 cans full-fat coconut milk
  • ½ - ¾ cup raw sugar
  • ¾ cup strong brewed coffee
  • 1 ½ tsp pure vanilla extract

Instructions

  1. Combine coconut milk, coffee, and raw sugar in a saucepan and heat while whisking for about 5 minutes.
  2. Remove from heat and whisk in vanilla extract.
  3. Let the mixture cool completely in the fridge for at least 6 hours, preferably overnight.
  4. Transfer to an ice cream maker and churn according to the manufacturer's instructions.
  5. Once churned, either serve immediately or transfer to a freezer-safe container to harden for several hours.
