Coffee Coconut Ice Cream

strong brewed coffee

pure vanilla extract
Instructions
- Combine coconut milk, coffee, and raw sugar in a saucepan and heat while whisking for about 5 minutes.
- Remove from heat and whisk in vanilla extract.
- Let the mixture cool completely in the fridge for at least 6 hours, preferably overnight.
- Transfer to an ice cream maker and churn according to the manufacturer's instructions.
- Once churned, either serve immediately or transfer to a freezer-safe container to harden for several hours.
