Ingredients

The tacos

  • 4 small flour or corn tortillas
  • 4 large eggs
  • 1 tablespoon sour cream or milk
  • 2 dashes hot sauce
  • ½ teaspoon fine sea salt
  • 1 ½ tablespoons unsalted butter
  • 2 cups thinly sliced vegetables
  • ¼ teaspoon chili powder
  • ¼ teaspoon ground cumin
  • ¼ cup shredded or crumbled cheese (optional)
  • ¼ cup thinly sliced green onion

Suggested garnishes

  • to taste chopped fresh cilantro
  • to taste hot sauce or salsa
  • to taste strips of avocado or guacamole
  • to taste diced tomato or sliced cherry tomatoes
  • to taste sour cream

Instructions

  1. Warm the tortillas in a skillet or microwave.
  2. Whisk eggs with sour cream, hot sauce, and salt.
  3. Sauté vegetables with remaining salt, chili powder, and cumin until tender.
  4. Cook the egg mixture in the skillet until clumpy but slightly wet.
  5. Stir in cheese and green onion, then assemble tacos with eggs, veggies, and garnishes.
