Instructions
- Preheat the oven to 450°F.
- Spread the cleaned rainbow carrots on a baking sheet.
- Roast the carrots for 15 minutes until the bottoms are golden brown.
- In a bowl, whisk together the orange juice, grapeseed oil, maple syrup, and grated ginger.
- After 15 minutes, remove the baking sheet and pour half of the orange juice mixture over the carrots, stirring to coat.
- Return the baking sheet to the oven and roast for an additional 15 minutes until the carrots are tender and browned.
- Transfer the cooked carrots to a serving dish and pour the remaining orange juice mixture over them.
- Sprinkle with salt and pepper before serving.
