Ingredients

The carrots

  • 1 pound rainbow carrots

The glaze

  • 2 tablespoons orange juice
  • 1 tablespoon grapeseed oil
  • 1 tablespoon maple syrup
  • 1 inch ginger (grated)
  • ¼ teaspoon salt
  • teaspoon pepper

Instructions

  1. Preheat the oven to 450°F.
  2. Spread the cleaned rainbow carrots on a baking sheet.
  3. Roast the carrots for 15 minutes until the bottoms are golden brown.
  4. In a bowl, whisk together the orange juice, grapeseed oil, maple syrup, and grated ginger.
  5. After 15 minutes, remove the baking sheet and pour half of the orange juice mixture over the carrots, stirring to coat.
  6. Return the baking sheet to the oven and roast for an additional 15 minutes until the carrots are tender and browned.
  7. Transfer the cooked carrots to a serving dish and pour the remaining orange juice mixture over them.
  8. Sprinkle with salt and pepper before serving.
