Instructions
- Preheat the oven to 400 degrees.
- Trim the tops of the carrots to about 1 inch and scrub them clean.
- Dry the carrots on a kitchen towel.
- Place the carrots on a baking sheet and drizzle with olive oil, then sprinkle with salt, pepper, and garlic powder.
- Toss the carrots to coat them evenly.
- Cover the carrots with another baking sheet turned upside down to steam them.
- Bake covered for 30 minutes, adjusting the time for thinner carrots if necessary.
- Remove the cover and roast for an additional 20 minutes until tender.
