Ingredients

The carrots

  • 2 bunches rainbow carrots

The seasoning

  • to taste extra virgin olive oil
  • to taste sea salt
  • to taste fresh ground black pepper
  • to taste garlic powder

Instructions

  1. Preheat the oven to 400 degrees.
  2. Trim the tops of the carrots to about 1 inch and scrub them clean.
  3. Dry the carrots on a kitchen towel.
  4. Place the carrots on a baking sheet and drizzle with olive oil, then sprinkle with salt, pepper, and garlic powder.
  5. Toss the carrots to coat them evenly.
  6. Cover the carrots with another baking sheet turned upside down to steam them.
  7. Bake covered for 30 minutes, adjusting the time for thinner carrots if necessary.
  8. Remove the cover and roast for an additional 20 minutes until tender.
