Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Peel the carrots and cut them diagonally into pieces about ½ inch thick.
- Place the carrots on the baking sheet and add olive oil, salt, and pepper.
- Toss the carrots until coated and arrange them in a single layer.
- Roast the carrots for 25 to 40 minutes, tossing halfway through, until caramelized and tender.
- If using fresh herbs, sprinkle them over the carrots before serving. Serve warm.
