Ingredients

Basic Roasted Carrots

  • 2 pounds carrots
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon fine sea salt
  • to taste freshly ground black pepper
  • 2 teaspoons chopped fresh chives, green onions, parsley or dill (optional garnish)

Spiced Version

  • ½ to 1 ½ teaspoons chili powder
  • ½ teaspoon ground cinnamon

Honey Butter Version

  • 1 tablespoon unsalted butter
  • 1 tablespoon honey

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Peel the carrots and cut them diagonally into pieces about ½ inch thick.
  3. Place the carrots on the baking sheet and add olive oil, salt, and pepper.
  4. Toss the carrots until coated and arrange them in a single layer.
  5. Roast the carrots for 25 to 40 minutes, tossing halfway through, until caramelized and tender.
  6. If using fresh herbs, sprinkle them over the carrots before serving. Serve warm.
