Honey Roasted Carrots
Ingredients
The carrots

carrots, peeled and sliced on a bias to 1 ½-inch long pieces
The seasoning

The glaze

honey

apple cider vinegar
The herbs

chopped fresh parsley

chopped fresh thyme leaves
Instructions
- Preheat the oven to 400 degrees.
- Place the carrots on a rimmed baking sheet, drizzle with olive oil, season with salt and pepper, and toss to coat.
- Spread the carrots into an even layer and roast for 20 minutes.
- In a small bowl, mix together honey and apple cider vinegar.
- Remove the carrots from the oven, drizzle with the honey mixture, and toss to coat.
- Return the carrots to the oven and roast for an additional 10 to 20 minutes until tender.
- For light browning, broil near the broiler element for a minute or two at the end.
- Remove from the oven, toss again, and sprinkle with fresh parsley and thyme before serving warm.
